Jim and Tara Carroll Jim and Tara Carroll have created, own and operate an old fashion butcher shop and
meat market in Vero Beach, Florida.

With thirty plus years working in the meat department at Publix, Jim’s passion for creativity has turned into a thriving business.

"I started working in the meat department of Publix on Miracle Mile when I was 15, when they were still hanging meat up and you cleaned the blocks with sawdust,"

Jim and Tara using authentic sausage combinations create all kinds of specialty sausages that you can't find anywhere else, like pizza sausage created for kids, green onion sausage with its unique look and wonderful flavor, Merlot Portabella sausage that’s a rave of the town, and a breakfast sausage that’s truly a sausage you’ll keep coming back for. Using all natural whole Boston butts and all natural casings, they create true masterpieces of savory enjoyment. You may find a new creation on your next visit!

At Carroll Meat and Seafood Market you will be pleased to find many meats are free from antibiotics, hormones, have been fed all vegetable feeds and are raised as humanely as possible on family ranches. You’ll find Niman Ranch and Natural Certified Angus prime cuts.

All meat at Carroll Meat and Seafood you’ll also find Bell & Evans chicken breasts from free roaming chickens fed an all-natural diet raised and processed in the heart of the Pennsylvania Dutch Country by pioneers in the natural foods market.

At Carroll Meat and Seafood you’ll always find a variety of freshly caught seafood delicacies. The seafood arrives daily from Jensen Beach and is always fresh from the ocean. Jim and Tara never put anything in the case that doesn't meet their standards of excellence.

"We have four kids ourselves and wanted to have a place where everyone was able to shop for high quality products," Tara said.

At Carroll Meat and Seafood you may get a chance to meet Chef Joby Smith, who prepares on site fresh delicacies like his notorious clam chowder, an array of one of a kind quiches, a bountifully loaded chicken pot pie, fresh lasagna made from Tara Carroll’s grandmother's recipe, and you’ll always be surprised and glad to see what Chef Joby prepares next.

Chef Joby Smith, resident Carroll Meat and Seafood culinary visionary enjoys the spicy side of life. His Belize residency background and his previous ownership of a raw bar, Chef Joby utilizes his knowledge of spices, rainforest peppers and old-fashioned good taste to create quiches, chowders, stews and pies.

Chef Joby creates a Cajun quiche packed with crabmeat, shrimp, and crawfish tails. He prepares a sausage quiche loaded with Jim Carroll’s freshly made sausage.

Chef Joby has concocted an outstanding pepper sauce known as Shrimpy Joe's Garlic Chili Pepper Sauce and is sold exclusively through Carroll Meat and Seafood, Inc.

Be sure to get to Carroll Meat and Seafood early enough or call in ahead, for Chef Joby’s creations and you may even get to try his famous Key Lime pie!

At Carroll Meat and Seafood you’ll also find fresh vegetables, fresh citrus juices from Lambeth Groves, a wine rack filled with bottles of unique wines from all over the world from Napa Valley to Africa. Wine tastings are scheduled once a month on a first come first serve basis.
